Street food in Vietnam is incredible, but I think the hygiene standards at many vendors are dangerously inconsistent. I've had amazing banh mi from a cart that looked sketchy, and also gotten food poisoning from a popular stall that had a long queue. Should we demand stricter food safety regulations even if it means some beloved stalls might shut down?
