Is restaurant authenticity just marketing?
Our local food culture often assumes that ethnic restaurants serve genuine recipes, but in my city, many of them adapt dishes to suit local palates or cut costs—some even use pre-made sauces. That's not inherently wrong, though it does blur the line between authenticity and fusion. When you eat out, how much does it matter to you if a restaurant's claim of being 'authentic' is actually more about marketing than tradition?
