Most so-called fusion dishes are just poorly executed versions of two distinct culinary traditions that end up tasting muddled and confusing. I've tried dozens of Japanese-Peruvian and Korean-Mexican spots, and only a handful actually enhanced both cuisines instead of diluting them. The obsession with combining everything is eroding the authenticity and precision that makes classic cooking special. Shouldn't we respect culinary boundaries instead of blurring them for the sake of trendiness?
