Do wood pellet grills really match charcoal flavor?
I've cooked with gas and charcoal for over a decade, but wood pellet grills still seem overhyped to me. A $400 pellet smoker promises set-and-forget convenience, yet my neighbor's $150 kettle charcoal setup produces smokier brisket every time. Sure, pellets offer consistent temperature control for slow cooks, but the flavor complexity and crust just don't match traditional charcoal. Am I missing something, or do most pellet grill owners just value ease over authentic barbecue taste?
