I've been reading about vertical farming startups claiming they can grow lettuce with 95% less water than traditional soil farming, but the energy costs for LED lighting and climate control are rarely disclosed. Is indoor agriculture actually a sustainable solution for future food security, or is it just a tech bubble that ignores the social and ecological value of small farms?
