Are fermented foods truly worth the health hype?
I've been cooking with fermented sauces for years, but the recent explosion of 'gut-friendly' claims around kimchi and kombucha feels overblown. The science on probiotics is still messy—many products don't even list viable strains, and your stomach acid kills most of them before they reach your gut. I'm not saying fermentation is useless, but treating these foods as medicine ignores the fact that a diverse diet and fiber probably do more for your microbiome than a pricey kombucha. So, can fermented foods actually deliver on their health hype, or are we just paying for a trend?
