I've been cooking at home for about five years now, and I still can't decide if following recipes step-by-step or improvising with what's in my fridge leads to better meals. I recently tried to replicate a Thai green curry I had in Bangkok, but without galangal and kaffir lime leaves, it tasted completely different. Does anyone else find that the more you cook, the more you rely on intuition instead of written instructions? When you're making dinner tonight, will you open a cookbook or just see what happens?
