Is authenticity in food a real standard or just a label?
I've been a line cook and a food blogger for eight years, and every time a new 'authentic' restaurant opens, a familiar debate flares up: should chefs who didn't grow up with a cuisine be allowed to cook it and call it authentic? I've seen a white guy in Texas make incredible pho that his Vietnamese mentor taught him, and I've also had 'authentic' tacos from a place where the salsa tasted like ketchup. The word 'authentic' feels like a gatekeeping tool that ignores how food actually travels and evolves. What do you think—is authenticity a standard we should enforce, or just a label that limits creativity?
