Is citrus acidity more essential than umami for home cooks?
I used to think umami was the holy grail of cooking, but after traveling through Southeast Asia, I've realized that a simple squeeze of lime can outshine any fish sauce or MSG. The bright acidity cuts through richness in a way that no savory element can replicate. Am I wrong to rank citrus above umami in importance for home cooks?
