Is fusion cuisine cultural appropriation or honest cooking?
Fusion cuisine often gets dismissed as cultural appropriation, but I think it's actually the most honest form of cooking we have. When I tried a Korean-Mexican taco truck in LA last month, the owner told me his family has been blending those flavors for three generations—long before it was trendy. Every cuisine we call 'authentic' today was once a fusion of trade routes and migration. So why do we gatekeep food traditions instead of celebrating their evolution?
