Is the premium for farm-to-table dining really justified?
Farm-to-table restaurants often charge double for ingredients that are barely fresher than what you'd find at a good grocery store. I've worked in kitchens where the 'local' label was mostly about marketing, not quality. Eating is about taste and nutrition, not a story attached to your plate. Convincing me that paying a premium for local produce is worth it?
